Directions:

Preheat oven to 425°F. Pat the chicken dry and rub with softened butter, olive oil, minced garlic, herbs, salt and pepper. Place chopped potatoes, carrots and onion around the chicken and drizzle with olive oil.

Roast until the chicken reaches 165°F internally and the vegetables are tender, about 60–75 minutes depending on size. Let the chicken rest for 10–15 minutes before serving.

2. Hearty Beef & Potato Skillet

This easy skillet dinner is perfect for a busy fall weeknight. Ground beef, potatoes, onions and peppers come together with plenty of savory flavors for a meal the whole family will love.

Directions

Return the beef to the skillet, stir everything together and top with cheddar cheese. Cover for a few minutes until the cheese is melted. Enjoy!

3. Apple Cider Glazed Pork Chops

Directions

Season pork chops generously with salt and pepper. Heat olive oil in a large skillet and sear pork chops for about 4–5 minutes per side, depending on thickness. Remove and set aside.

Add apple cider, Dijon mustard, brown sugar and apple cider vinegar to the skillet. Simmer until slightly reduced, then stir in butter and fresh sage.

Add the sliced apples and cook until tender. Return the pork chops to the skillet and spoon the glaze over the top.

4. Cozy Sausage, Bean & Kale Soup

When you want something warm and easy, soup is always a great idea. Savory sausage, creamy white beans and kale make this a hearty one-pot dinner.
