Ingredients:

  • 4 lbs Gartner’s old fashioned beef short ribs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth (or bone broth from Gartner’s for added richness)
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Fresh parsley, chopped for garnish

Instructions:

1. Preheat and Season

Preheat your oven to 325°F. Season the short ribs generously with salt and pepper.

2. Sear the Short Ribs

In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. This step locks in the flavor and caramelizes the surface. Once browned, remove the short ribs and set aside.

3. Sauté the Vegetables

In the same pot, add the diced onion, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables soften and become fragrant.

4. Add Liquid and Braise

Stir in the tomato paste, letting it cook for a minute, then pour in the red wine to deglaze the pot. Allow the wine to simmer for a few minutes. Next, add the beef broth, thyme, and bay leaves. Return the short ribs to the pot. The liquid should just cover the meat.

5. Low and Slow in the Oven

Cover the pot with a lid and transfer it to the preheated oven. Braise the short ribs for about 2.5 to 3 hours, or until the meat is tender and falling off the bone. About halfway through cooking, give the pot a stir to ensure everything is evenly braising.

6. Serve

Remove the pot from the oven, and let it rest for about 10 minutes before serving. Garnish with fresh parsley and pair the short ribs with mashed potatoes, polenta, or an artisan bread to soak up all the delicious braising liquid.
