If you’re craving delicious fajitas without all of the effort, sheet pan flank steak fajitas are the way to go. They’re juicy, flavorful, and super easy to make. All you need is a fresh flank steak from Gartner’s, one sheet pan and a few kitchen staples.

Steak Fajitas Ingredients
For the marinade:
- 1.5 lbs flank steak
- 3 tbsp olive oil
- Juice of 2 limes
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
For the sheet pan:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large red or yellow onion, sliced
- 1 tbsp olive oil
- Flour or corn tortillas
Optional toppings:
- Sour cream
- Avocado
- Fresh cilantro
- Salsa
- Lime wedges
Instructions
1. Marinate the Steak
In a bowl or zip-top bag, combine olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Add the flank steak and marinate for at least 30 minutes (up to 8 hours).
2. Preheat and Prep
Preheat oven to 425°F. Line a large sheet pan with foil or parchment for easy cleanup.
3. Arrange on Sheet Pan
Remove steak from marinade and slice it thinly across the grain. Toss sliced peppers and onions with olive oil and a pinch of salt and pepper, then toss everything together.
4. Bake
Bake for 18–22 minutes, or until steak reaches your desired doneness, flipping halfway (about 135°F for medium-rare). Optionally, broil for the last 2–3 minutes for a bit of char.
5. Enjoy
Remove from the oven and serve with warm tortillas and your favorite toppings.
