Summer is here, and there’s nothing like a perfectly grilled steak on a warm evening. At Gartner’s, we pride ourselves on providing the highest quality cuts of meat, and we want to help you make the most of them. These grilling tips will ensure your steaks come out juicy and full of flavor every time.
1. Choose the Right Cut
The first step to a great steak is selecting the right cut. Here are some great cuts we recommend:
- Ribeye: Known for its marbling and rich flavor
- New York Strip: A balance of tenderness and flavor
- Filet Mignon: Extremely tender, though less flavorful than fattier cuts
- T-Bone: Offers two cuts in one, combining the tenderness of the filet and the flavor of the strip
2. Season Generously
Simple seasoning can bring out the natural flavors of your steak. Here’s how:
- Salt: Use a coarse sea salt or kosher salt
- Pepper: Freshly ground black pepper adds a nice kick
- Optional Additions: Garlic powder, onion powder, and a touch of smoked paprika can enhance the flavor without overpowering the meat
3. Bring to Room Temperature
Before grilling, let your steak sit at room temperature for about 20-30 minutes. This ensures even cooking, helping the steak to cook more evenly throughout.
4. Preheat the Grill
A hot grill is essential for creating a good sear. Preheat your grill to high heat (450-500°F) for about 15-20 minutes before cooking. This helps to create that delicious crust on the outside while keeping the inside juicy.
5. Oil the Grill Grates
To prevent sticking, lightly oil your grill grates. You can do this by dipping a paper towel in oil and using tongs to rub it over the grates. Be sure to use a high smoke point oil, such as canola or vegetable oil.
6. Perfect Timing
Timing is crucial for the perfect steak. Here’s a general guide:
- Rare: 120-130°F (2-3 minutes per side)
- Medium Rare: 130-135°F (4-5 minutes per side)
- Medium: 135-145°F (6-7 minutes per side)
- Medium Well: 145-155°F (8-9 minutes per side)
- Well Done: 155°F+ (10+ minutes per side)
Use a meat thermometer to check the internal temperature for accuracy.
7. Let it Rest
After grilling, let your steak rest for about 5-10 minutes. This allows the juices to redistribute throughout the meat, ensuring each bite is as juicy as possible.
8. Slice Against the Grain
When you’re ready to serve, slice your steak against the grain. This means cutting perpendicular to the direction of the muscle fibers, which helps to maximize tenderness.
9. Enhance with Butter
For an extra touch of indulgence, add a pat of herb butter on top of your steak just before serving. The butter will melt over the hot steak, adding a delicious richness.
