Ingredients:
– 5 sweet potatoes
– 2 tbs. olive oil
– 1 lb. Gartner’s Ground Chuck
– 8 oz. salsa
– 2 cloves garlic – minced
– 1-2 jalapeños – diced
– 4 tbs. Taco seasoning
– ¼ cup water
– 1 tsp. Paprika
Toppings:
– Shredded cheese
– Sour cream
– Hot sauce
– Avocado
Recipe:
1. Preheat oven to 425 degrees. Line a baking sheet with tin foil and place the sweet potatoes on the baking sheet
2. Poke holes all over sweet potatoes using a fork. Drizzle sweet potatoes with olive oil and sprinkle with salt
3. Bake sweet potatoes in the oven for 45-50 minutes
4. While the sweet potatoes are in the oven, heat olive oil in a large skillet. Once oil is warm, add garlic and let cook for 1-2 minutes
5. Add ground beef to the skillet and brown. Drain grease
6. Pour ¼ cup of water and taco seasoning onto the ground beef in the skillet and allow it to thicken
7. Add salsa and diced jalapeños to the ground beef and stir. Let cook for 1-2 minutes
8. Once the sweet potatoes are finished, remove them from the oven and slice through each one vertically, making sure not to cut all the way through the bottom
9. Spoon the cooked meat into each of the sweet potatoes
10. (Optional) set your oven to broil, top with shredded cheese, and broil for 1-2 minutes for melted cheese on top
11. Add your favorite toppings & enjoy!
