Ingredients:
– 1 polish sausage
– 2 zucchinis
– 2 tbsp olive oil
– 1 red bell pepper
– ½ tsp garlic powder
– ¼ tsp onion powder
– ½ tsp dried oregano
– 1 clove of garlic – minced
Instructions:
– Heat 1 tbsp olive oil in a skillet over medium heat
– Using a knife, cut a thin slice of the casing of the polish sausage and peel to remove casing
– Slice the polish sausage into 1/4 inch slices
– Once oil is hot, add the sausage until browned and remove from the pan
– Add additional tbsp of oil to the pan (medium heat) and add zucchini, bell pepper and spices
– Add polish sausage back to the skillet and mix in minced garlic, stirring to combine all ingredients
– Allow to cook for 2-3 more minutes
– Remove from heat and serve
