Slow Cooker Corned Beef Recipe: A St. Patrick’s Day Favorite

St. Patrick’s Day is just around the corner, and there’s no better way to celebrate than with a plate of tender, flavorful corned beef! Whether you’re hosting a dinner or just looking for an easy, hands-off way to prepare this classic St.Patrick’s Day dish, the slow cooker is your best friend. This method allows the meat to cook low and slow, resulting in juicy, fall-apart corned beef that pairs perfectly with cabbage, potatoes, and carrots.

Slow Cooker Corned Beef & Cabbage Recipe

Ingredients:

✔ 3-4 lbs corned beef brisket
✔ 1 packet of pickling spices
✔ 4 cups water or beef broth (for extra flavor)
✔ 1 cup beer (optional, for added depth of flavor)
✔ 1 onion, quartered
✔ 3 cloves garlic, smashed
✔ 4 carrots, peeled and cut into chunks
✔ 6-8 baby potatoes or 3 large potatoes, quartered
✔ ½ head of cabbage, cut into wedges
✔ 2 tbsp apple cider vinegar
✔ 1 tbsp Dijon mustard (optional)
✔ 1-2 bay leaves
✔ 1 tsp black peppercorns


Instructions:

1. Prep the Slow Cooker

Place the corned beef brisket in the slow cooker, fat side up. Sprinkle the seasoning packet over the top. If you don’t have pickling spices, use a mix of black peppercorns, mustard seeds, and crushed bay leaves.

2. Add Liquid & Flavor

Pour in water, beef broth, and beer (if using). Add the onion, garlic, bay leaves, and black peppercorns. The liquid should mostly cover the meat but not fully submerge it.

3. Slow Cook to Perfection

Low Setting: Cook for 8-10 hours for the most tender results.
High Setting: Cook for 4-6 hours, but low and slow is the best option.

4. Add Vegetables

With 2 hours left in cooking time, add the carrots and potatoes. Adding them too early can make them too soft.

With 1 hour left, add the cabbage wedges. This ensures they stay firm and don’t turn mushy.

5. Rest & Slice

Once done, carefully remove the corned beef and let it rest for 10-15 minutes before slicing. Cut against the grain for the most tender bites.

6. Serve & Enjoy!

Plate your corned beef with the cooked veggies and ladle some of the flavorful broth over everything. Serve with Dijon mustard or horseradish for the perfect St. Patrick’s Day meal!
