Easy Slow Cooker Barbacoa Beef Recipe

Who knew the most difficult part of being an adult would be choosing what to have for dinner each night? Whether you’re working from home and want an easy slow cooker recipe to throw together in the morning, or you’re looking for a delicious weekend dinner, this barbacoa recipe is SO easy and makes for delicious tacos, burritos or burrito bowls.

Gartner's Chuck Roast

All you need for this recipe is:

– Slow cooker
– 1 medium/large sized chuck roast (the one we used was 3 lbs)
– 1 ½ tablespoons sea salt
– 1 tablespoon chili powder
– 1 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1 tablespoon olive oil
– ½ cup beef broth
– 1 teaspoon oregano
– 2 jalapeños 
– 2 tablespoons lime juice (equivalent to one whole, freshly squeezed lime)

Step 1: Mix together sea salt, chili powder, black pepper, garlic powder, cumin and paprika into a small bowl 

Step 2: season your chuck roast on all sides with your seasoning mix

Step 3: heat olive oil in a pan on high heat 

Step 4: once the oil is hot in the pan, place the chuck roast in the pan and sear on both sides

Step 5: remove the chuck roast from the pan and place it directly into your slow cooker

Step 6: pour ½ cup of beef broth over the chuck roast

Step 7: season with a bit more sea salt, pepper and 1 teaspoon of dried oregano

Step 8: place the lid on your slow cooker and cook on low for 9 hours

Step 9: with 1 hour remaining, slice jalapeños and toss them in the slow cooker for the remaining hour of cook time. This softens the jalapeños and adds a little bit of spice to the barbacoa

Step 10: after the 9 hours is complete, shred the barbacoa (pro-tip: use a hand mixer to easily shred the meat) and top with lime juice

Step 11: enjoy! We used corn tortillas and made these into some delicious tacos
